WIAW – June 12

And, I’m back on track! Nothing too exciting for what I ate today, but I am happy to be back on track with my blog posts, and I am VERY happy to have this awesome summer weather. We are hitting mid-90’s temperatures with some classic STL humidity, and it feels wonderful. I am definitely looking for every excuse to go outside during the day.

Breakfast- so in love with this beef liver pate….can’t help it (recipe coming soon).

Lunch- leftover veggie hash from dinner last night: sweet potato, onion, brussels sprouts, asparagus, mushrooms, and carrots with canned salmon.

Snacks- a banana and some homemade apple chips from my new dehydrator!

WIAW – May 1

More like Lame 1. I would just like to say that I started out the day so well, and then I spent 3 hours straight in meetings and my brain turned to mush. And so, I now present “What I ate (for breakfast) Wednesday.”

Today I had turkey/liver meatballs, sweet potato with coconut oil, and a pear.

Lunch (not pictured, ugh) was a salad with romaine, arugala, carrots, onions, avocado, olives, and salmon with the most amazing honey mustard dressing.

Dinner was some sweet potato fries (check out my Twitter feed for the one photo), and grilled tuna steak.

During the day I also snacked on some plaintain chips and raw honey (omg yum).

WIAW – April 24

I remembered to take pics! Heck yeah 🙂

Breakfast: mexican-spiced bison and peppers left over from last night, a banana, and a big scoop of coconut oil. I also had a delicious coconut milk latte.

Between meals I had 1 g of L-glutamine.
Lunch was more left over bison and a giant bowl of veggies (asparagus, onion, mushroom, sweet potato) with nutritional yeast and hemp seeds. I also had an iced green tea (no water, unsweetened).

My pre-allergy shot snacks were a banana, beef jerky, and some pumpkin seeds.

And after grocery shopping I nommed on some olives–not the whole bowl!

For dinner we had salmon, roasted potatoes, and zucchini noodles with asparagus and onions. I also had a small bowl of craisins for dessert.

WIAW – April 17

I am a #wiaw picture-taking failure.

Breakfast: beef/liver meatballs, small steamed potato, bacon slices and sauerkraut. Iced coconut milk latte.

Lunch was an amazing bowl of mexican-spiced veggies and some kombucha.

I had a banana and a serving of pistachios before allergy shots.

Post allergy shot snack was some aloe juice and hard-boiled eggs.

Dinner was this awesome salad with boston lettuce, salmon, potatoes, tomatoes, and asparagus with honey mustard dressing.  We also had some plantain crackers and blackberries for dessert.

WIAW – April 10

I always seem to forget that it is Wednesday! I think I should work on making coffee at home so that I have a chance to wake up before breakfast.

Breakfast: white rice with spinach and chicken broth, sauerkraut, a beef pemmican stick from US Wellness Meats, and some coconut maca balls (I promise I didn’t eat the whole plate!). I also had an iced coconut milk latte, which will be my summer addiction for sure.

I had pumpkin seeds and a banana for a pre-allergy-shot snack. Followed by kombucha since I had to make a stop at the grocery store 🙂

WIAW – April 3

Today had some pretty high highs and pretty low lows in terms of food.

Breakfast was a highlight today: beef/liver meatball, sauerkraut, plantain crackers with a little coconut oil, and some coconut crack balls with maca powder blended in.

Lunch was a lowlight: I was at a work event during lunch, which happens very rarely. The hosts were really attentive and accommodating–they contacted the catering company so I would have a special lunch. When I got my lunch, it was labeled “gluten-free” but not “dairy-free”… blar. I ate some of the sandwich contents, but the spices gave me a headache 😦 Thankfully, I followed the good advice of all savvy restricted eaters and brought some snacks. However, beef jerky, plantain crackers, and sprouted pumpkin seeds are not very satisfying. Back at work, I supplemented with more random snacks. Better than nothing, but not an enjoyable lunch. Out of the $5 fancy box, I only ate the hummus and crackers.

Dinner was much better: salmon, white rice, sauerkraut, asparagus, and bacon with some candied ginger for dessert.

WIAW – March 20

Welcome to “What I ate Wednesday – sickness edition”

I am on my second day of being stuck in bed with a nasty sinus and upper respiratory infection. Super gross.

Breakfast was a small portion of cauliflower potato soup.

By lunch time I had a craving for salmon, so I mixed a can up with some avocado and had a side of veggies. Sorry for the really ugly picture.

I snacked on some of these dried cherries, but tried not to have too many since they do have added sugar.

Dinner time…more soup! And broccolini. My photo won’t upload, but you get the idea 🙂

WIAW – March 6

Here’s what I ate today…

I was running a little late this morning, so breakfast was smoked salmon and some steamed potatoes (which I ate on my way to work).

I barely remembered to grab a pic of lunch, but I had some cauliflower rice, sweet potatoes, mushrooms, asparagus, and onion.

For dinner I had cauliflower rice with roasted veggies (sweet potato, butternut squash, onions, mushrooms, red and purple potatoes) and broccolini.

And, snacks were candied ginger (yum!), a banana (not pictured), and chips (bad…).

I also had to sample some of my shipment from US Wellness Meats, which arrived today. This is the best beef jerky I have ever had.

WIAW – February 27

Breakfast: bone broth, sauerkraut, chicken, and orange juice. I have recently become OBSESSED with orange juice. I can’t stop drinking it.

Weekend Highlights: Veggie Haul and Road Trippin’

I used some vacation days to take a long weekend, and it was definitely worth it. We got to take a little road trip to see some friends that we haven’t seen in years. It was, however, cold! Moving north is NOT on my list of things to do.

Before heading out, I did stock up the fridge with some veggies from the farmer’s market.

Then, road trip! Illinois is very boring to drive through.

We packed a full cooler for a one-night trip because it can be really difficult to find food on the road. Here’s a picture of the (cold) roasted sweet potato/butternut squash, avocado, and canned salmon that we ate in a Starbucks parking lot 🙂
