WIAW – August 7

Sorry for the missed week, guys. It has been super crazy town around these parts. I am getting ready to travel for another work trip, and I seem to keep eating things I am allergic too 😦 and I don’t know what they are 😦 including today 😦 😦

Breakfast today was some leftover veggies with barbecue beef and a side of bacon πŸ™‚

Crazy town led us to Chipotle for lunch. I had a barbacoa taco salad. It was super delish, but I tried the salad dressing for the first time today, and it did not agree with my insides 😦 I am extra sad because it was really good salad dressing.

Dinner was steak with asparagus and broccoli… Super yum

WIAW – June 12

And, I’m back on track! Nothing too exciting for what I ate today, but I am happy to be back on track with my blog posts, and I am VERY happy to have this awesome summer weather. We are hitting mid-90’s temperatures with some classic STL humidity, and it feels wonderful. I am definitely looking for every excuse to go outside during the day.

Breakfast- so in love with this beef liver pate….can’t help it (recipe coming soon).

Weekend Highlights: Flip flops! Iced latte! And Internet publishing

SUNSHINE!!!

It looks we are finally into spring πŸ™‚ I am not looking forward to my eventual battle with pollen, but right now, it is beautiful, sunny, and I have my windows open!

Breaking out my flip flops was a major highlight this weekend. They were a little dusty but I didn’t mind.

2013-04-07 12.44.44

I was also able to enjoy my first iced coconut milk latte outside in the sun and without a coat (in my super cute insulated klean kanteen)

2013-04-07 12.45.19

The third highlight this weekend was getting an article published. I recently signed up for an account at infobarrel.com and submitted my first article. You can check it out here Garlic: Health Friend or Foe?Β πŸ™‚

And now, I am off to play with my food processor and get ready to make some bun-less guacamole bacon burgers with some amazing grass-fed ground beef from US Wellness Meats.

WIAW – April 3

Today had some pretty high highs and pretty low lows in terms of food.

Breakfast was a highlight today: beef/liver meatball, sauerkraut, plantain crackers with a little coconut oil, and some coconut crack balls with maca powder blended in.

2013-04-03 07.55.13

Lunch was a lowlight: I was at a work event during lunch, which happens very rarely. The hosts were really attentive and accommodating–they contacted the catering company so I would have a special lunch. When I got my lunch, it was labeled “gluten-free” but not “dairy-free”… blar. I ate some of the sandwich contents, but the spices gave me a headache 😦 Thankfully, I followed the good advice of all savvy restricted eaters and brought some snacks. However, beef jerky, plantain crackers, and sprouted pumpkin seeds are not very satisfying. Back at work, I supplemented with more random snacks. Better than nothing, but not an enjoyable lunch. Out of the $5 fancy box, I only ate the hummus and crackers.

Dinner was much better: salmon, white rice, sauerkraut, asparagus, and bacon with some candied ginger for dessert.

Weekend Highlights: Chicken Thighs, Kitty Cuddles, and Snow!

I’m still on the mend from the nasty plague from which I have been suffering, and I feel a little better every day. The highlights this weekend were:

Sunday brunch of chicken thighs, bacon, sweet potatoes, and spinach. Eaten in bed with coffee from the french press.

2013-03-24 12.39.35

Lots of kitty cuddles. Sunday was an all-pajamas-in-bed day, which made the cats (and us) very happy.

And, snow! What the heck, man? It was 50 degrees on Saturday!

Weekend Highlights – Bacon, Coconut Crack, Maca, and New Water Bottle!

I had Friday off this week, which made for a relaxing and productive weekend. It’s too bad I can’t have 3 days for every weekend!

My first tasty accomplishment was to cook up a big batch of these bacon ends I ordered from US Wellness Meats. This is the best bacon ever. We now have bacon ready to go for breakfast and a whole lot of bacon grease set aside to cook with.

2013-03-17 16.58.42

I also made these Coconut Crack bars, but in ball form. She is not lying at all by using the wordΒ crack. We ate all of the first batch and had to make a second…which we then demolished.

2013-03-17 19.10.41

My new food adventure this weekend was to try maca powder in my smoothie. It has an interesting flavor. It worked really well in a berry smoothie and in a banana/pineapple one.

2013-03-15 11.56.22

I also got a new water bottle, and it’s so cute!
