Weekend Highlights: Sleep, Sleep, and Brunch in Bed

This was the longest and shortest weekend. It was all work and please-don’t-let-me-get-sick prevention sleep. As a result, I don’t have too many photos to share. The weather was pretty blah, but it is supposed to be 80 degrees and sunny tomorrow πŸ˜€

Here’s a pic of brunch in bed: fried plantains, smoked salmon, and olives.

B-E-A-U-T-Y

Happy Friday! I was hoping to have a recipe post up today, but alas that is not the case. Instead I figured I would just share the song I have in my head right now. One of the things I list in my bio is “drag show support staff.” I spend A LOT of time around performers, and one lesson that everyone can learn from the people I work with is that no matter your size or shape, GURL, you can be fierce. But, no matter what, you betta werk!

WIAW – April 24

I remembered to take pics! Heck yeah πŸ™‚

Breakfast: mexican-spiced bison and peppers left over from last night, a banana, and a big scoop of coconut oil. I also had a delicious coconut milk latte.

Between meals I had 1 g of L-glutamine.
Lunch was more left over bison and a giant bowl of veggies (asparagus, onion, mushroom, sweet potato) with nutritional yeast and hemp seeds. I also had an iced green tea (no water, unsweetened).

My pre-allergy shot snacks were a banana, beef jerky, and some pumpkin seeds.

And after grocery shopping I nommed on some olives–not the whole bowl!

For dinner we had salmon, roasted potatoes, and zucchini noodles with asparagus and onions. I also had a small bowl of craisins for dessert.

Weekend Highlights: Rotisserie Chicken and a NEW IPAD!

I’m running a little behind getting my “Weekend Highlights” post up, but it is because I spent my time being a good girlfriend and helping to grade some tests (yay organic chemistry!)

I also normally have 3 highlights for my weekend, but this time, one of my highlights is so big, I think I can get away with just 2. The first one is this amazing dinner that my girlfriend put together from a Costco rotisserie chicken.

And the second highlight…I GOT A NEW IPAD! And I am ridiculously excited about it. I got my first ipad as a graduation present when I finished my PhD, and it was not terribly old, but Apple is no longer supporting software updates for it so my apps were crashing constantly 😦 However, my new one is awesome! I got a keyboard! It’s so shiny and pretty! πŸ™‚

Recipe: Maca Coconut Balls

Maca root powder is a delicious addition to your diet that is full of antioxidants. Maca is an adaptogenic herb that is known to balance hormones and promote fertility. It is sometimes referred to as “nature’s viagra” (though this one is also for the ladies). I like to mix up a batch of these no-bake “cookies” and eat a couple with my breakfast.

Maca Coconut Balls

Ingredients

  • 2 cups shredded coconut
  • ~6 Tablespoons coconut oil (I don’t really measure this. Start with a couple big scoops and add more as needed for your desired consistency.
  • 2 tsps vanilla
  • 4 tsps maca powder
  • ~1 Tablespoon honey
  • 2 tsps cinnamon (or more, to taste)

  1. Combine all ingredients in a food processor. These amounts work perfectly in the small bowl on my food processor, but I do have a fairly large model.
  2. Process until everything makes a nice paste.
  3. Scoop out and form into small balls. Now that the weather is a little warmer, I will sometimes put the whole food processor bowl into the fridge for 10 minutes before this step.
  4. Once formed, store the balls in the refrigerator.

WIAW – April 17

I am a #wiaw picture-taking failure.

Breakfast: beef/liver meatballs, small steamed potato, bacon slices and sauerkraut. Iced coconut milk latte.

Lunch was an amazing bowl of mexican-spiced veggies and some kombucha.

I had a banana and a serving of pistachios before allergy shots.

Post allergy shot snack was some aloe juice and hard-boiled eggs.

Dinner was this awesome salad with boston lettuce, salmon, potatoes, tomatoes, and asparagus with honey mustard dressing. Β We also had some plantain crackers and blackberries for dessert.

Weekend Highlights: Soccer, Rubber Bracelets, and Books!

I had a great time this weekend. On Friday night I drove up to my parents house so that I could go to my nephews first soccer game on Saturday morning.

Here’s a really tiny picture of him playing goalie. It was one of those fun kids soccer games where everyone gets to play a different position in each quarter and there was at least one person yelling, “NO! Go the OTHER WAY!”

My sister had a fun present for me in the form of this super cute allergy bracelet.

The third highlight was books, which I don’t have a picture of. I got my nephew the first Harry Potter book, and I got a copy of Practical Paleo for my mom. Since I don’t have a picture of the books, you should instead enjoy this picture of a baby pig on a leash.
