And then it was November

I’m working really hard to put on the brakes!

It finally got cold here–21 degrees when I got up this morning 😦 I think one of my ultimate life goals is going to be moving somewhere warmer–but not too warm 🙂

As evidenced by the fact that I have once again not blogged for a month, things have been kind of crazy. However, it is slowly getting better. I’m looking forward to the time I am going to spend with my family over the holidays. I also have two really fun trips planned with my girlfriend, both to see bands that we love. We also have some plans to rearrange the apartment which I think will be a nice reset for creativity in the things we are both doing.

A big change, and something I am super excited about is that I went back to school. It was a bit of a scary change (I have spent far too much time in school already and I currently work at one), but I already feel invigorated and ready to charge forward with all of the ideas I have. I am enrolled in the Health Coach Training Program at the Institute for Integrative Nutrition. I am only 3 weeks into classes and it has already made a big difference in my life. In about 6 months I will be able to start working with clients, helping them transform their lives.  So, if you or anyone you know is interested in a Health Coach, let me know!

One of my class assignments this week is to have a positive attitude. Wish me luck, especially today. I am on my way to the dentist, eek!

One photo for today. Here a picture of my breakfast buddy who likes to hang out while I have coffee.

Life updates

Sometimes life happens.

And sometimes it all happens at once.

The last half of August was a crazy storm of life. In a three week period I was traveling for work, my grandmother passed away, and my girlfriend had major surgery on her knee. Hello, cortisol rush. I somehow missed all of September and nearly all of October. I think things are finally calming down…just in time for the holidays!

I just want to end with a few photos of what I’ve been up to.

My new love of sardines

Also an obsession!

Love you, grandma.

WIAW – July 17

Oh. Em. Gee. I am exhausted. We have been fostering a puppy for the last few days, and I think he might be the death of me. It had gotten so crazy that we managed to eat out for lunch and dinner today. Not cool, but it will get better.

Breakfast was some major randomness from the fridge: a beef/bison burger patty and a chia pod. Also, lots of coffee. The chia pod was amazing. I discovered them on my most recent trip to Whole Foods and I am in love.

We had Chipotle for lunch, but I forgot to grab a pic. My gf and I usually split a burrito bowl (no rice, no beans) with fajita veggies, double chicken or steak, salsa, lettuce, and guacamole.

And by the time dinner came around, we just grabbed a pizza. Gluten free crust, no cheese, with chicken, bacon, red pepper, artichokes, onions, and green olives.

WIAW- Vegas edition!

Greetings from Vegas!

I have been living the hotel life for the last few days while on a work trip. It’s been a lot of fun, but it definitely required a lot of planning to make sure I would have food for the week. I may write a separate post about the planning and what I did for the whole week. For now, I want to share what I had today. The event provides food for part of the week, and they have been amazing with allergies.

Breakfast: I brought my own nectarine and avocado, which I added to the bacon and fruit salad provided (both of which were labelled as safe for me).

20130710-214109.jpg

Lunch: barbecue chicken and salad. I got to be the first person to eat off the buffet to make sure nothing was cross contaminated.

20130710-214254.jpg

Dinner: I have been eating in my room every night, and enjoying relaxing in front of the television. Today I had a can of tuna, tomatoes, and avocado with rice chips.

Between meals I snacked on some pumpkin seeds, and, of course, coffee 😊

WIAW-July 3

Oops..this post is a little late, but I am really excited to get it up because I finally ate something new for breakfast!

20130704-085931.jpg

20130704-090012.jpg
Coconut milk yogurt with hemp, pumpkin, and chia seeds, honey, and blueberries.

For lunch I had zucchini pasta with mushrooms, tomato sauce, and hemp seeds. It was absolutely delicious…until I got sick 😦 The only thing we could think of is that I am sensitive to the calcium chloride used as a preservative. Has anyone else run into this?

Dinner was a serious of junk food disasters because we are in the middle of grading exams for my gf’s summer class. There was some gluten free pizza, potato chips, and summer sausage involved, but I did not grab any pics. Ugh. Today will be a better day. I have a grass fed beef brisket in the crockpot 🙂

WIAW – June 26

Oh, long summer days. If only I could spend them outside. Nothing too exciting on the food front in today’s post, but here are the photos for your enjoyment 😊

Snacks! I had FAR too many pistachios, but they were mighty delicious.

I missed my lunch photo, but I had a salad with tons of veggies and avocado.

Dinner was tilapia, potatoes, and sauerkraut.

WIAW – June 12

And, I’m back on track! Nothing too exciting for what I ate today, but I am happy to be back on track with my blog posts, and I am VERY happy to have this awesome summer weather. We are hitting mid-90’s temperatures with some classic STL humidity, and it feels wonderful. I am definitely looking for every excuse to go outside during the day.

Breakfast- so in love with this beef liver pate….can’t help it (recipe coming soon).

Snacks- a banana and some homemade apple chips from my new dehydrator!

Where have I been—Vacation Edition!

It has been a few crazy weeks (including some super lazy time that did not lend itself to computering). I am definitely behind on writing What I Ate Wednesday posts and on posting recipes, but I’m back :)! I used Memorial Day weekend as one of those really rare “do nothing” weekends. My girlfriend visits her family once or twice a year, and when she goes out of town, I turn into a total hermit. Over Memorial Day weekend I read an entire book from the Game of Thrones series…which is about 1000 pages! I literally read for 16 hours one day. It was the most amazing thing ever. I’ve made it to the 5th book in the series, and I’m not really sure what I will do with myself once I finish…maybe clean my apartment? (hahaha)

After a relaxing Memorial Day, I had three crazy days of work and then my real vacation, which also involved a lot of sitting and reading….this is probably why my girlfriend and I get along so well. We took a little road trip to Atlanta, so today’s post is a little photo collection of our trip 🙂

Before we even hit Georgia, the cast iron factory outlet was our first stop. You can buyed “damaged” (read: barely scratched) products for a discount, so we added a dutch oven and a new 12-inch skillet to our cast iron collection.

Cast iron factory outlet??? Heck yeah!

Cast iron factory outlet??? Heck yeah!

Our main reason for going to Atlanta was for the Fall Out Boy concert, and we even got an autograph after.

squee! Pete Wentz!

I was also really excited about visiting the aquarium. I think I could sit and stare at fish all day. One of my favorite animals to see were these asian otters. They are like tiny cat versions of regular otters!

These jellyfish were also pretty cool. They phosphoresce the color of the light that is shining.

And, what is a vacation without food? Well, I would usually say that not eating out on vacation is pretty typical for us. However, Atlanta has Ted’s Montana Grill. This restaurant is brilliant with handling food allergies, and any restaurant that serves bison steak is on my list of places to eat. I actually ate the same thing all three times we went there (wedge salad, bison steak, asparagus, and baked potato), but it was so delicious and the wait staff even made sure to only offer desserts that we could both eat.

2013-06-03 18.53.11

holy crazy yum, batman!

I ended my vacation week by making another short drive to see my niece’s dance recital. She was super adorable, but this pic is the one that really sums up her personality.

And now, back to work! Having an entire week off was definitely necessary for a little battery recharge. I hope everyone is having a good start to summer. Any fun vacation plans out there?

WIAW – May 22 and some Weekend Highlights

I spent all day Monday driving across the ever-interesting state of Illinois and missed getting in a “Weekend Highlights” post, but because I am also a bad food photographer, I only have one photo for my WIAW…so yay for combined posts!

We had a long weekend of fun and driving, which meant some comfy I-swear-I’m-really-an-adult clothes.

And, here is my sad attempt at taking a picture from the…..FALL OUT BOY CONCERT!!!

photo 2 (2)

For my one food photo, I managed to grab a picture of lunch which was ground bison with veggies (asparagus, butternut squash, onions, and brussels sprouts).

WIAW – May 15

I feel like I spent my entire day running in circles, when I really just sat in a cubicle all day. My poor adrenal glands…

Breakfast: I am still obsessed with beef liver pate, plantain crackers, kombucha, and brussels sprouts.

photo 1 (1)

Grabbed a banana for a snack, followed by this huge salad for lunch.

Afternoon snack: delicious Kind bar. Not a bad flavor, but not really my favorite thing to snack on.

photo 4 (1)

Dinner: bison burger with mushrooms over arugula with zucchini and yellow squash. Amazing.
