WIAW – March 6

Here’s what I ate today…

I was running a little late this morning, so breakfast was smoked salmon and some steamed potatoes (which I ate on my way to work).

I barely remembered to grab a pic of lunch, but I had some cauliflower rice, sweet potatoes, mushrooms, asparagus, and onion.

For dinner I had cauliflower rice with roasted veggies (sweet potato, butternut squash, onions, mushrooms, red and purple potatoes) and broccolini.

And, snacks were candied ginger (yum!), a banana (not pictured), and chips (bad…).

I also had to sample some of my shipment from US Wellness Meats, which arrived today. This is the best beef jerky I have ever had.

WIAW – February 20

I completed all of my #sleetpocalypse shopping today. Now, I just need my work to close…any minute now…guys?

In any case, here’s a little peek at what I ate today.

Breakfast was homemade sauerkraut and cauliflower potato soup with hemp seeds sprinkled on top. I forgot to take a pic of my coffee with coconut oil

Lunch was zucchini noodles with mushrooms, onions, broccoli, and avocado.

My snacks today were a banana and some cuties (most adorable orange ever). I probably ate 4 cuties.

Dinner was cauliflower rice, avocado, peppers, onions, and chicken with mexican spices.

Health update and internet find

The internet found the perfect workout for me! I’m gonna be ripped.

Today was my visit to the GI doctor. It was a short visit, but since I have effectively corrected my digestive issues with my diet, there wasn’t anything to troubleshoot. He did order a genetic test to see if I have celiac disease. However, if that comes back negative, then my diagnosis is gluten sensitivity. The treatment in both cases is to continue with a gluten-free diet, and, in my case, grain free until I decide to reintroduce some as an experiment. I’m really curious to see how the test results come out.
